Whenever I think of comfort food, my mind immediately goes to Spaghetti Carbonara. It’s a dish I learned to make from my grandmother, who had a knack for turning simple ingredients into something magical. Ideal for anyone who loves pasta, it’s surprisingly easy to make, making it perfect for both beginners and seasoned cooks. The creamy sauce, crisp pancetta, and tender spaghetti come together for a meal that’s as satisfying to make as it is to eat.
- 8 ounces of spaghetti,
- 2 large eggs,
- 3/4 cup freshly grated Parmesan cheese,
- 4 slices of pancetta or bacon, chopped,
- 2 cloves garlic, minced,
- Salt and black pepper to taste,
- Fresh parsley, chopped for garnish
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
In a small bowl, whisk together the eggs and Parmesan cheese until well combined. Set aside.
In a large skillet over medium heat, cook the pancetta or bacon until it’s crispy, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.
Quickly add the drained spaghetti to the skillet with the pancetta and toss well to coat. Remove from heat, and then gradually mix in the egg and cheese mixture. Stir briskly until the sauce thickens and coats the pasta, adding pasta water a little at a time to achieve the desired consistency. Season with salt and pepper to taste.
Divide the spaghetti carbonara among plates. Garnish with additional Parmesan cheese and chopped parsley. Serve immediately and enjoy!
